Bhature are Famous fried Indian flat breads ... usually kneaded with curd and allowed an overnight fermentation for the sour flavour to develop.
With incorporating starter THROW -AWAY here... it ferments in 3 hours... and has the same peculiar taste , the authentic Bhature have ... one of the best ways to utilise throw aways , i feel... second of course being cakes :)
IN JUST 2-3 hours... the dough is ready to use ... in cold ... keep in a pre - heated oven , switched off. for 2- 3 hours , or in the sun.
Recipe__
3/4 th cup throw away starter
2 cups All purpose fl.
about 3/4th cup water __adjust acc. just make sure , it not very wet and loose... th...ese need to be tight , as the fermentation will make it loose in a while.
2 tsp oil ,
1/4th tsp soda-bi carb.
salt as desired.
a tsp of vinegar.
AFTER 3 hrs .. add half a cup more if u find it relaxed.... knead then roll with a light hand and start frying.... mind you again.. be gentle in rolling it out... instead of oiling .. i dry rolled it with a lil fl. since it tears a bit easily than the traditional bhature dough
submitting it to Yeast spotting..... and now featured :)
